Intense, floral, apricot, orange, citrus, chocolate. Yigarcheffe is an area especially known for the quality of its coffee. It is located within the Sidamo region in southern Ethiopia and is considered the birthplace of coffee.
The coffees in this area are characterized by having a clean cup, with flavors that won't leave you indifferent, with a bright acidity along with complex floral and citrus notes, generated by the drying process. The coffee beans are washed and left exposed to the sun, unlike the natural process, where the coffee cherries are left to dry in the sun, fermenting for days, thus obtaining more aromas of nuts, ripe fruit and even a little to wine or liquor.
In Ethiopia, the coffee market is not liberalized, so all merchants must buy it through the ECX (Ethiopian Commodities Exchange) market. Only large-scale producers and cooperatives can market it worldwide outside of this market, if they have the ECX market quality certificate.
This variety of coffee has a lot of body, notes of citrus fruit and bone flavor, as well as aromas of citrus or green tea, thanks to the washing process and the high altitude where it is grown.
It becomes a perfect drink as both filtered or with milk.
